When I worked for the Top Casino’s as a Chef to prepare Sauces and Meals for High Rollers who have lost a lot of money, you want to leave them with a satisfied feeling. This in itself is a skill and real pressure, trust me. My Slogan is always:Simplicity, is the key to success, so start with the basics, understand the dishes origination, the people, the spices, and culture. If someone from the Middle East walks in they most likely are accustomed to the spices, meals, and dishes from their Country and Culture. Unless they want to orders outside of their normal traditional foods, then knowing as much as possible regarding their tastes and culture is how you succeed in pleasing them.
